Breakfast for Dinner


Last night, I made some gluten free pancakes with blueberries. I decided to create a berry syrup. Here is the recipe. It was so good. The cinnamon added a warm flavor to the mix.

1 cup blueberries
1 tsp vanilla
2 tsp cinnamon
1/4 cup raw honey
1/4 cup pure maple syrup


Simmer in a sauce pan and mash up the blueberries a little.

Hope in Seemingly Impossible Situations

Tonight, I am unable to go to sleep until I write out what has been on my mind. Writing has always been my way of letting out steam or stress. So here it is.
When, I was at church on Sunday we sang a song that spoke to me. It said, "Nothing is impossible, Nothing is impossible, You hold the world in Your hands." God revealed to me the fact that I have been doubting Him. Sometimes, I assume that some things are impossible or in the far out future. I have so many dreams, yet it seems like I am not moving any closer to reaching them. I guess I have gotten caught up in the fear that some obstacles or situations are too big for God. This of course is a lie. Nothing is impossible for Christ. He makes all things work for the good of those who love him. (Jeremiah 29:11) This is a promise I need to remind myself time and time again. My future is not in my hands alone. He has everything mapped out and every detail in line with His perfect will. And the amazing part is that He continues to forgive me for all the times I do not believe. His grace is so abundant that it covers all the disbelief that seems to creep up so often. He created me for a purpose and He will make sure that it happens. God told me to pay attention to the lessons He is trying to teach me. I have to be patient and grow in maturity in Him. One of these lessons I have been aware of recently, is to respect my parents and people older than me. If I want to be a good parent and good example to my future kids one day, I need to show them what it means to honor my elders. When I have children, I want them to follow in my footsteps and respect me. How can they do that if they do not have an example? Another huge lesson I have learned as of recent, is to not be afraid to ask God for things. I need to be able to come to Him and tell Him my desires. Also, I need to be able to tell others so they can pray for me and support me as I head toward these goals and dreams. The two biggest aspirations that have been on my mind nearly non-stop lately are having photography as a part time job and being a stay at home mom. Instead of cowering my head in defeat, I need to trust that God will work it out in the perfect time. Faith is definitely not a quick lesson to learn. I pray though that I can grow more and more as I wait patiently for Him. God is bigger than any of my doubts. Thank goodness!

Crock Pot Beef and Vegetable Soup

Here is my own recipe I came up with for a really great tasting soup.
Put about 1lb of stew meat with a package of Trader Joe's organic beef broth in a crock pot. Let it cook overnight on low for 4 hours. (I have a crock pot with a timer so it automatically switches to stay warm after it's done cooking. This works great for when I have to work late.)
Cut up about 8 organic carrots, 4 yellow potatoes, 1/3 of an onion, and an 8 oz package of mushrooms.
Put them each in their own bags and refrigerate until the next morning.
In the morning, add the carrots, potatoes, and onion to the soup. Also, combine about 1/4 tsp of pepper, 1 tsp of sea salt, one bay leaf, and a little bit of Italian seasoning. Turn crock pot to low for 4 more hours.
After the 4 hours, add the mushrooms and put on low for one more hour.
Enjoy!
This soup was easy to make and very tasty! I will make it again for sure.

The Simple Things


Today, I had a wonderful day with my husband. I enjoy hanging out with him. We are easily entertained by the smallest things. This afternoon, the weather was gorgeous out side so we went for a walk on my favorite trail. I took photos with my phone to test it out. It takes pretty good wide angle shots but does not have a zoom. (not the best photo of me) Here are some shots from the trail. After, we walked we went to Menchies and I got Sorbet with delicious fruit. It was a fun and restful day.

Contentment vs. Coveting

Lately, I have been learning how to be content. This season, God has been teaching me to be patient, yet not give up on my dreams. It is so easy to feel discouraged when things do not go as planned or circumstances cause things to take longer than planned. How do you respond to disappointments? If things don't go your way how do you react? Those are some of the questions that have been running through my mind. How do you remain content with your life, yet not become stagnant or spiritual lazy? Think of a seedling. It is small and still growing, yet has a long life ahead. It might not appear to be that promising, yet at any moment it could grown strong and tall. Likewise, God gives us growth spurts when we least expect it. We need to not be overcome with discouragement but instead focus on the hope Christ has given us.

A Berry Nice Day







Yesterday, I picked berries with a friend. When I was a kid, my parents would take myself and my siblings to the farm to pick berries, vegetables, etc. My mom canned the produce and made amazing jam. I hope to learn these skills and pass them on to my future children. It was quite an adventure picking berries. We found a birds nest and a bees hive in the plants. The birds nest was so perfect in form. Smooth and round it looked as if a craftsman had formed it. God is so creative. He created animals who know how to provide a home and care for their babies. We spent about 3 1/2 hours picking berries, both blueberries and rasberries. I plan to make rasberry jam and freeze the blueberries so I can bake with them throughout the year. All in all, it was a very fun day. My friend and I plan to go to another farm soon in the future.
